In iOS 27, of a UIViewController, how do I remove the blur behind the title? What do I need to call?

In the new UIKit design, the blur behind a large title is handled by the navigation bar’s scroll edge effect / glass appearance, not by a separate “title blur” API.
If you want to remove that blur, you generally need to remove any custom background customization on the navigation bar or toolbar — specifically anything set through:
UINavigationBarAppearance- a custom
backgroundColor - other background customization that interferes with the system glass appearance
The WWDC guidance is that the bar background is transparent by default, and custom background styling can interfere with the effect behind the title.
So the answer is: there isn’t a special call to remove the blur behind the title; instead, stop customizing the navigation bar background so the system’s default transparent glass treatment applies.
If you want, I can also show the exact UIKit appearance properties to clear/reset.
